Just had a look at a few of the video editors... easiest one to install on Ubuntu is definitely Kino (just go to Add Applications), but it looks light on features compared to MovieMaker. Jahshaka is only available for Ubuntu 6.04, but looks like it has a much richer feature set.

As for screen recording, gtk-recordMyDesktop is a simple GUI program that will be included in Ubuntu soon. See Finally! How to screencast on Linux!

Yeah, apparently Dell allows you to buy without the OS (or get a refund).

As for a basic video editor, have you tried those listed at OpenSource Alternatives as alternatives to MS MovieMaker? And another linux video editor that looks great (but I haven't tried) is Jahshaka.

Video editing (and easy screen capture) are two areas where there aren't great Open Source alternatives (yet, it takes time for people with skills to contribute their time freely to the cause, as well as other issues.) I think if i was doing a lot of that, i'd buy a Mac or use XP at the moment. It's a shame though, as they're two tools that could help produce lots of learning resources for Ubuntu and linux in general :(
